You already can, although not all hotels have opened their reservations yet.

Unless you speak fluent Japanese you’ll need to go through Kumano travel. Most accommodation have already booked out for his fall. It’s been incredibly busy/popular with the limited options. If you seriously want to do it send your request immediately and hope for the best
