We would like to experience a traditional ryokan however one of us is a celiac so we need to find one that can provide gf food. Any tips?

if you really enjoy an experience of traditional ryokan, it contains dinner and breakfast. they serve almost the same meals for all guests. it is traditional way. they earn money by serving a set of meals and staying.
when you mean that you want to have an experience of sleeping with futon on tatami. you may find a hotel which has tatami rooms. there are many.

There may be a place, but Osaka is also not really known for its traditional accommodation.
What Ken said about food is correct. In general, ryokans can be quite restrictive with changing food specifically when your reason is not a fad but a life threatening one.
I know to a foreigner it may not sound the same, but some of the big fancy hot spring hotels located in the Kansai region might be a good bet for those who have better knowledge than I.
Onsen hotels often have traditional rooms, good food and some which are more based to local clientele have refined service

There are few ryokans where meals are optional. I look for such ryokan myself, because typical ryokans tend to serve too much food that I cannot finish.

Thanks for your responses. After much looking I've given up on the idea of a ryokan that serves GF food. The only one I came across was very expensive and out of my range. I think I'll find one in the Arima onsen area and hope to find gf food elsewhere in the town.

I'm aware that there is a website called Happy Cow for vegetarians and vegans which includes Japan. Is there one for gluten free in Japan?

A search on Happy Cow with the keyword OSAKA GLUTEN FREE actually found Gluten free stores. When I searched with the keyword HYOGO GLUTEN FREE, I found 2 shops in Arima Onsen, but neither shop seems to be compatible with GLUTEN FREE. I checked Tabelog, but I couldn't find it. In Kobe, Ashiya and Nishinomiya, there seem to be stores that are compatible with Gluten free.

normally there is around 10 different meals in small bowls/plates when having ryokan dinner - you just eat what you can and let friend eat the rest:) Some have buffee table, but it is rare.
