Nakasu Yatai stalls can we try at Hakata

Hi folks,
We will be visiting Fukuoka for the first time this November. We want to try eating at one of the stalls (preferably Oden or Hakata Ramen) at Nakasu Yatai Yokocho area, near Canal City mall.
The food there come highly recommended by Japan Guide, but when speaking to a couple of Japanese expats we know, they mentioned that some of the popular stalls don't serve new customers. That we must be introduced by others first.
1. If you have tried the stalls, can you recommend which stalls we should try for ramen or oden? I see on Google photos they are numbered from 1-19 and have the name of the stalls listed (ie. Dai-chan, Sanyuu, Tatsu-chan, Hyou-chan, etc.).
2. Are the menu only availble in Japanese?
3. If the stalls are too busy or don't accept new customers, could you recommend other places to try Hakata Ramen in Fukuoka?

60 - 70 % of yatai guests are tourists, including international. Some (maybe half) has time limit system. There's no refusal of new comers. One has to be in a queue. They have to leave before time expires.
