Lake Biwa shoyu brewery tour or cooking class

We have a few days at Lake Biwa in mid-Oct. We have scheduled a sake tour and lunch at Fujii Honke. We found several shoyu breweries listed on Explore-Nagahama, but the ones that have websites don't seem to offer tours. I know some of the very old buildings are unsafe for visitors, so it may not be possible.

Also if you know of a cooking class we'd love to do that, too!

Koji mold lives in the storehouse, so it may be difficult to see inside.
When people enter, the condition of the mold may change, and the taste of the soy sauce may change.
